The holiday season has arrived, and we are getting into the yuletide spirit with a seasonal collaboration dinner event. We are hosting along with VOX Table, the New American restaurant opening at the beginning of 2015 in the Lamar Union community complex in South Austin, A Very VOX Holiday @ Noble Sandwich Co. This special six-course dinner event ($70 per person), which includes a collaborative menu and complimentary cocktails from Austin’s Treaty Oak Distilling Co., takes place on Thursday, Dec. 18, beginning at 7 p.m., at Noble’s North Austin location, 4805 Burnet Road. And in the true spirit of the holiday season, portions of the proceeds from the dinner event will benefit the local Toys for Tots charity.
This unique dining experience will feature menu courses devised and created by Noble chefs and co-owners John Bates and Brandon Martinez, as well as VOX Table Executive Chef Joe Anguiano. The feast’s first course, prepared by us includes Beet Carpaccio served with a buttermilk bleu cheese dressing, toasted nuts, chicory salad, radish, endive and escorol. Chef Anguiano’s second course features a seasonal Roasted Chestnut Soup with licorice root and herbed croutons, followed by Chef Anguiano’s third course, Black Grouper with a vegetable cassoulet and a decadent red wine and lobster coral sauce. Noble chefs Bates and Martinez will prepare the fourth course, a savory Bone Marrow Budino served with mushroom bacon, a Meyer lemon sauce and a watercress and frisée salad. VOX Table’s fifth course is a Roasted Duck Breast served with a cabbage and leek confit, and sweet and sour strawberries. The final course includes an indulgent dessert of White Chocolate and Allspice Mousse with pomegranate gelée, grapefruit-walnut granola and florentine tuile, prepared by VOX Table Pastry Chef Allison Henschel.
